American Summer Parfait (Red White and Blue)

Red, White and Blue Parfaits are a sure way to know that the summer season is upon us.  Yes we know the official first day of summer is not until June 20th, but the “unofficial first day of summer” is Memorial day.  Achieving perfectly patriotic desserts is as easy as layering strawberries, blueberries and yogurt with your favorite whipped topping.  This easy recipe is perfect for the kids to help with, and will bring a smile to anyone this summer.

Ingredients

  • 1 cup fresh strawberries chopped
  • 1cup fresh blueberries chopped
  • 1/4 cup sugar
  • 4 ounces premade pecan sandies.
  • 1/2 cup your favorite whipped topping plus 4 tablespoons for garnish
  • 1/2 cup low-fat vanilla yogurt
  • honey, to taste

Directions

  1. Put strawberries in one bowl, and blueberries in another.  Sprinkle sugar over Set aside.
  2. Place cookies in plastic bag and use meat mallet or rolling pin to crush them finely. Set aside.
  3. In a bowl use a Swiss Diamond Jêt Mix with the beater attachment whip together 1/2 cup of whipped topping and yogurt until well blended. Set aside.
  4. Divide cookie crumbs evenly in bottom of 4 parfait glasses (or any clear glass will do)
  5. Spoon strawberry mixture evenly over crumbs.
  6. Spoon yogurt mixture evenly over strawberries.
  7. Spoon honey evenly over yogurt.
  8. Divide blueberries evenly, and scatter them over yogurt.
  9. Then more yogurt.
  10. Then more honey.
  11. Just before serving, top with strawberries and a dollop of whip topping.
