Healthy Blackened Steak Salad

  • 1/4 cup smoked paprika
  • 1 tablespoon ground black pepper
  • 2 teaspoons salt
  • 2 teaspoon garlic powder
  • 2 1/2 teaspoon cayenne pepper
  • 1 1/2 teaspoon dried oregano
  • 2 teaspoon dried thyme
  • 1/2 cup olive oil
  • 1/8 cup balsamic vinegar
  • 3 teaspoon Dijon mustard
  • 12 cups (packed) mixed baby greens
  • 1 green bell pepper, thinly sliced
  • 1 cup thinly sliced red onion (about 1/2 onion)
  • (4) 4 ounces beef tenderloin steaks, each about 1/2 inch thick
  • 6 tablespoons butter, melted
  • 3 ounces of shaved parmesan cheese
  • 2 tomato, quartered
  • 2 ounce cashew nuts

  1. Mix the first 7 ingredients (through thyme) in a small bowl until well mixed.  Set aside
  2. Mix oil and vinegar in a large bowl until fully blended. Add greens, pepper and onion slices and toss to coat. Set aside
  3. Heat a Swiss Diamond Griddle on medium-high heat
  4. Meanwhile coat both sides of the steaks with spice mixture.
  5. Dip coated steaks in melted butter and place steaks on very hot griddle and cook to desired doneness, about 2 minutes per side for medium-rare.
  6. Transfer steaks to a cutting board and let rest for 2 minutes.
  7. Split the salad mixture between four plates
  8. Using a Swiss Diamond Knife, thinly slice the steaks against the grain.
  9. Top the salads evenly with the steak, tomato slices and sprinkle with cheese.
  10. Garnish with cashew nuts
