Overnight Apple Pie Steel Cut Oatmeal
Overnight Apple Pie Steel Cut Oats are a hearty and filling breakfast, perfect to keep you going all morning long.
Yield: 4 Servings
1 cup steel cut oats
3 cups water
1 cup milk (regular, soy, or almond)
2 teaspoons cinnamon
1 teaspoon vanilla
1 (16 oz) can apple pie filling (I use sugar-free) Chop apples to bite-sized pieces
2 tablespoons any sweetener of your choice; Sugar, sugar substitute that measures like sugar, honey, maple syrup, or if your sweetener measures differently than sugar, use to taste
1 tablespoon for each serving Optional toppings: chopped walnuts or pecans, cinnamon chips, dried cranberries
In a medium pot, add steel cut oats and water.
Bring to a boil and let simmer for 2 minutes.
Remove from heat and cover with a lid and let sit overnight.
In the morning, add milk, your choice of sweetener, and cinnamon. Stir to combine.
Cook over medium heat stirring occasionally, until warmed through and thickened to desired thickness, anywhere from 5-10 minutes.
Stir in apple pie filling. Remove from heat.
Pour into serving bowls and top with optional toppings such as chopped nuts, cinnamon chips, or dried cranberries.
